bang head reception food help...how much

I have had 140 accept but I need to know how much food to prepare...here is my list

heart shaped pimento cheese sandwiched
heart shaped chicken salad sandwiches
pickle roll ups
fruit salad (fresh fruit)
meatballs
sausage balls
lil smokies in sauce
pasta salad
pineaplle and cream cheese spread and crackers
spinach dip and crackers
ham and cheese pineapple tree
cheese straws
weddding cookies
hot wings with bleu cheese and ranch dressing
veggie tray
I am sure there is something I am forgetting but this sounds like most of it
Can anyone help?

This is what I would do!

heart shaped pimento cheese sandwiched 140
heart shaped chicken salad sandwiches 140
pickle roll ups (Not sure what this is)
fruit salad (fresh fruit) 1/4 cup per person
meatballs 280
sausage balls 280
lil smokies in sauce I do one pack per 20 people.
pasta salad 1/4 cup per person
pineapple and cream cheese spread and crackers 3 crackers a person
spinach dip and crackers (same)
ham and cheese pineapple tree (LOL not sure)
cheese straws 2 each
wedding cookies 2 each
hot wings with bleu cheese and ranch dressing 300
veggie tray It's all on the size go to your local daily and see about what size you are doing and go by the count they have.
I am sure there is something I am forgetting but this sounds like most of it

Not sure how much of these items you have listed are on here, but this is a great site that has helped us a lot. We did decide to have the meal catered, but we are still doing an appetizer table for guests to munch on while we take pictures...

cake Appetizer Portions

The general rule of thumb is a dozen appetizer portions per guest. But keep in mind that you would want no less than 1 piece per variety per guest. So with 140 guests and 15 items you are looking at an average of 11 dozen per appetizer item. Meat and warm items tend to be more popular, so you would want to lean heavier towards those items. Bowl os pasta salad 1/2 cup = 1 portion and veggie trays are generralt 4 veggies pieces= 1 portion. If the wedding cookies are your only dessert item, you will need approxiomately a per person (24 dz)
