Default Cream puff cakes

I want to do one of these for the rehearsal dinners. There is this bakery that has the best cream puff that Kenny loves. But for them to put one together it would coast more then our wedding cake. So I think I'm just going to buy them by the dozen and do it my self. Not this big maybe just like 5 dozen of the puffs. The ? I have is does any one know what they drizzle over top of them. It looks like a clear sugar! I have seen some drizzled with chocolate but Kenny don't like chocolate so thats out. Any one know of any thing else?

The traditional drizzle is a sugar/corn syrup that is a pain in the bum to make!!! I say drizzle with something easy... store bought carmel or strawberry syrup. Or maybe make a thin homemade icing out of powdered sugar and water (that's what I use on homemade donuts)

this will make a thin frosting. You could roll them in confection sugar, or a few for a different look to make a pattern? It looks like they rolled a few in sprinkles or nuts too!

I really just want to stack them up and drizzel something on them. I don't think I will have time to roll them in stuff.

I think you could drizzle very very thin frosting over them. That way it would sort of be dripped and drizzled all over, instead of you having to frost each one individually.

I would like a glaze thats why I think the sugar and water might work. I'm going to mix a little up and see what it taste like. Breezy do you know the measurements to make the powdered sugar and water.

I have a bride who is using a croqumbouche as her wedding "cake." The baker indicated that the weight of the stack can be a problem with the bottom cream puffs squishing. He therefore uses a styrofoam cone in the center and fastens the cream puffs to the outside with toothpicks, then stacks around the cone from the bottom up. The syrup or glaze or usually fairly thick. Caramel syrup or ice cream topping should work.

I never thought of that I could make a big one but just use the number I need. Thanks

It turned out great! We put it on a cone with tooth picks then we took confectioner sugar and milk and poured it over it. Kenny because of how we did it with the cone but every one loved it. I'll have to see if I can find a picture of it.
