Host of TV cooking show, Cooking with Marie, Marie Hejl kicks it up a notch with a salmon recipe perfect for a romantic dinner!


Salmon with Mango Salsa

Host of TV cooking show, Cooking with Marie, Marie Hejl shares with us a simple and delicious salmon recipe from her book, Cooking with Marie: On Any Occasion!.

SERVES 2

Ingredients:
1 mango, peeled, seeded and diced*
1/8 cup diced red onion
1 jalapeño, diced (seeded if desired)
1/4 red bell pepper, diced
Juice of 1/2 lime
1/8 cup chopped fresh cilantro or mint
Kosher salt and freshly ground pepper to taste
3 tablespoons extra virgin olive oil, divided
2 salmon fillets (6 ounces each)
Lemon and lime wedges and cilantro sprigs for garnish

*Mango should be ripe (with red and yellow skin), but not too soft. Choose a mango that is slightly firm; otherwise, it will be difficult to dice.

Instructions:

For salsa, in a medium bowl, combine the mango, onion, peppers, lime juice, cilantro and salt. Set aside until ready to serve.

Heat a large skillet over medium heat; add 1 to 2 tablespoons oil. Drizzle the salmon with remaining oil; season with salt and pepper. Place salmon in the skillet, skin side up. Increase heat to medium-high; cook for 3-4 minutes. Gently flip each fillet; cook for 3-4 minutes or until fish flakes easily with a fork.

Transfer salmon to individual plates; serve immediately with mango salsa.
